Who doesn't like Nut Cheese (lol)
I'm definately not a vegan/vegetarian but sometimes I try to eat healthier like I am one. I decided to try this recipe but I didn't have all the ingredients. I think my recipe is more practical and much easier for people to try/make since the ingredients can be found in most cabinets. What do we think?? Zakiya's "Vegan" Mac & Cheese |

Ingredients
- 1/4 cup walnuts
- 1/4 cup yeast
- 1 medium onion
- curry powder
- 1 tbsp paprika
- salt and pepper to taste
- 1 garlic clove
- 3/4 cups soy or evaporated milk
- 1 tbsp cornstarch
- 1/4 cup oil
- 2 tbsp soy butter
- 1 tbsp lemon/lime juice
- 6-8oz pasta, cooked
Instructions
- Place all ingredients in a blender. Blend on high speed until smooth.
- Pour "nut cheese" sauce into sauce pan and simmer over high heat. Decrease heat to low and simmer, stirring occasionally for 10 minutes, or until mixture bubbles.
- Combine "nut cheese" sauce with macaroni noodles and serve.
You can add broccoli, peppers, tomatoes, basil, tofu and/or meat for a heartier meal.
You can also bake it: Preheat oven to 325 and place macaroni mixture in a 8 or 9″ square baking dish. Cover and bake 20 minutes. Uncover and sprinkle with 1/2 C herbed bread crumbs. Continue baking, uncovered, for 15-25 minutes until topping is golden brown.
