Who doesn't like Nut Cheese (lol)

I'm definately not a vegan/vegetarian but sometimes I try to eat healthier like I am one. I decided to try this recipe but I didn't have all the ingredients. I think my recipe is more practical and much easier for people to try/make since the ingredients can be found in most cabinets. What do we think??

 
 


Zakiya's "Vegan" Mac & Cheese

 

Prep time: 10 mins
Cook time: 15 mins
Total time: 25 mins
Ingredients
  • 1/4 cup walnuts
  • 1/4 cup yeast
  • 1 medium onion
  • curry powder
  • 1 tbsp paprika
  • salt and pepper to taste
  • 1 garlic clove
  • 3/4 cups soy or evaporated milk
  • 1 tbsp cornstarch
  • 1/4 cup oil
  • 2 tbsp soy butter
  • 1 tbsp lemon/lime juice
  • 6-8oz pasta, cooked
 
Instructions
  1. Place all ingredients in a blender. Blend on high speed until smooth.
  2. Pour "nut cheese" sauce into sauce pan and simmer over high heat. Decrease heat to low and simmer, stirring occasionally for 10 minutes, or until mixture bubbles.
  3. Combine "nut cheese" sauce with macaroni noodles and serve.
 
You can add broccoli, peppers, tomatoes, basil, tofu and/or meat for a heartier meal.
You can also bake it: Preheat oven to 325 and place macaroni mixture in a 8 or 9″ square baking dish. Cover and bake 20 minutes. Uncover and sprinkle with 1/2 C herbed bread crumbs. Continue baking, uncovered, for 15-25 minutes until topping is golden brown.
